Today, I'm making  a healthier version of veggie quiche. Quiche crust is usually made from butter and flour. This version is healthier and made with shredded potatoes, which cuts fat and calories, and ups the Resistant Starch factor!

Lasagna, layer upon layer of soft buttery pasta with the delicious combination of juicy seasoned tomatoes mixed with ground meat perfectly seasoned with softened onions all mixed perfectly together with hot, cheesy mozzarella cheese topped with a crunchy Parmesan cheese crust. Lasagne is the perfect dish for gatherings. Easy to make and will always impress everyone's bellies!

Happy Weekend... And to start the day, I made our MiddleEastern Shakshouka (شكشوكة). Very delicious and easy to make!


  • Preparation time: 10 minutes

Soft Boiled Eggs


Never skip breakfast! 
To get a perfect soft boiled egg:
Put one egg in a pan, cover it with cold water, let the water boil and let it the egg boil in it for 3-4minutes. Put it in a cold ice bath to stop it from cooking!

Asian Rice Noodle Salad


Okay... So today I started professionally taking baby steps into food photography. Below is my recipe for Asian Rice Noodle Salad!
Ingredients:
1 pack frozen shelled edamame (Fool 7eraty)
Thin rice noodles or rice sticks
3/4 cup rice vinegar
2 tablespoons olive oil
2 tablespoons sugar
1/2 teaspoon salt
3 tablespoons low sodium soy
A handful of halved cherry tomatoes
1/2 cup lightly salted peanuts, chopped, divided
Instructions:
1-Cook edamame according to package directions. Drain and rinse with cold water. Cook noodles for 5-6minutes then drain, transfer to a work surface and chop twice.
2-Whisk vinegar, oil, soy, sugar and salt in a large bowl. Add the edamame, rice noodles, tomatoes and 1/4 cup peanuts; toss well to combine. Serve sprinkled with the remaining peanuts.
