Hummus & Zabady Fatta

Sunday, July 20, 2014

Sometimes, when you have a big gathering over your place and feel like doing something really different and start thinking... "Hmmm,, what is something different that could be paired with meat or chicken?". Only the is when you start thinking of something nice and easy to be made.

Today, we'll be making a very easy delicious dish which is Hummus & Zabady Fatta!

*Your ingredients should have:
- 2 Pita breads (عيش شامي) cut into small squares covered in olive oil and dried herbs (Mint, thymes, etc)

*Hummus's seasonings:
- 1 cup hummus paste
- 1 cup regular hummus
- 2 tbsp lime juice
- 1 tbsp cumin
- 1 tsp chili
- 1tsp pepper and salt
NB: You can get ready made hummus paste from supermarkets

*Yogurt's seasonings:
- 3 cups of yogurt (I prefer low fat)
- 1/3 cup of toasted pine nuts (صنوبر)
- 4 tbsps lime juice
- 4 tbsp garlic
- 1 tbsp chili powder
- salt and pepper

*Method:

- Start by putting your pita bread into the oven mixed with the olive oil and the herbs for 15 mins till it browns and becomes crispy. take it out of the oven, layer it on your serving plate. People usually fry it though but then it gets really heavy.

- Mix your Hummus ingredients all together, if the paste is too thick, make it lighter with tahini, milk or water and add more salt till it becomes really creamy and easy to spread then mix in them the regular hummus beans inside and mix it well then layer it over the bread

- then, start mixing all your yogurt ingredients till it's smooth and not lumpy then spread it on the hummus carefully so they don't mix then sprinkle your pine nuts and drizzle your olive oil over it then let it rest for 30 minutes before serving so the flavors incorporate and gets the bread more moist.

NB: This dish is served in room temperature and could be served with chicken, beef, turkey. Want a better idea? stuff it will chicken livers or chicken breasts!
