Fussili aglio e olio - Fussili pasta with Garlic and Olive Oil (Marriott Inspired)

Yesterday, I mentioned that Cairo Marriott sent us a pack of Fussili Pasta along with the Kitchen Confidential invitation pack. Of course I'd use that pasta to make a special inspired recipe by the pasta. Since Fussili calls for Italian, so I decided to make an easy aglio e olio which is basically, olive oil and garlic pasta with chili flakes and I added a dash of minced olives as well for a twist.

Preparation time: 5 minutes
Cook time: 15 minutes




Your ingredients should have:
1/2 pack of fussili pasta
100 ml of olive oil
4 cloves of garlic (1 clove for each person eating)
1 tsp chili flakes
3 olives, pitted and chopped

Instructions:

-Cook the fussili in a large saucepan of salted boiling water according to the packet instructions, I boiled mine as it's hand made for 3 minutes only.

-Half way before the pasta is ready, heat 100 ml of olive oil in a large frying pan and sauté the garlic, olives and chilli. When your garlic turns brown, don't forget to add 3 tbsp of hot pasta water to stop the garlic cooking any further.

Add your drained pasta to the pan and add a little more olive oil. Keep tossing the pasta. The pasta water and oil will emulsify, thickening and coating the fussili. Season to taste with salt and pepper and sprinkle with parmesan, if you like.
