Beef and Broccoli Stir Fry with 13 mins Microwave Steamed Rice (2 in 1 recipe)

Tuesday, April 21, 2015

Today, all I wanted to eat is beef and broccoli stir fry with 13 minutes microwave steamed rice... YES, rice that is only made in a microwave safe container. Well, this recipe is a very easy combination to be done... The spiciness of the beef, the freshness of the broccoli that takes the heat away and the fluffy starchy rice is just amazing.

Preparation time: 5 minutes
Cooking time: 15 minutes
Yields: 4

Your ingredients should have:
400 grams tenderloin steak, sliced
1 tablespoon vegetable oil, divided
3 cups broccoli florets
1⁄3 cup reduced sodium soy sauce
4 tbsp sweet chili sauce
3 cloves of garlic
1 teaspoon ground ginger
1/2 tsp chili flakes

For the rice:
1/2 cup of rice
1 cup of water
1 tsp whatever oil of your choice

Preparations:
Soak your meat in the soy, sweet chili, garlic, chili flakes mixture in addition to some salt and pepper and let it stand for 10 minutes.

In a pan, heat the oil then add your beef with the marinade and let it cook till it crisps and starts caramelizing and a bit saucy.

While the the beef cooks, steam the broccoli for 5 minutes and that's it.

For the rice:
Rinse the rice till the water runs clean and in a microwave safe bowl, put the rice, top it with water, salt, pepper and oil. Half cover it with the lid and just microwave for 13 minutes. Don't stir, nothing. Just when it comes out of the microwave, fluff it with a fork.. TADA!
