Cherry Pinapple French Clafoutis

Clafoutis or clafouti is a dessert that I recently fell for last year in Paris in a random boulangerie around Porte Maillot where I tasted it without having any idea what it was. I asked the baker about it because... It was simply just a fruity fresh mixture that was somewhere between a cake, custard and a pancake all at the same time. Yes, exactly, that's why today I'll be posting it's extremely easy recipe.




**Your ingredients should have:
-1.5 cups pitted cherries
-0.5 cup sliced pineapples
-3 eggs
-3/4 cup Almond flour (Just process almonds in the food processor till they're powder like)
-1/2 cup icing sugar
-1 cup milk
-1/2 cup whipping cream
-Zest of 1 lemon
-1 tsp. vanilla extract
-Pinch salt
-1 tbsp. butter or butter spray for greasing the pan
*Method:
- Preheat oven to 190 degrees and butter your baking dish then add your cherries and
pinapples to dish.
-In a bowl, whisk together eggs and sugar until combined. Whisk in flour then slowly add and whisk in milk and whipping cream until batter is smooth. Add zest, vanilla and salt. Whisk just to combine. The consistency of the batter will be a little thicker than whipping cream. Let batter rest for 10 minutes.
-Pour batter over cherries. Bake until set and puffy, about 40 to 50 minutes. Serve warm with a dusting of icing sugar.

***NB: You can use ANY berry fruit or any tender fruit that you'd like and maybe even add some chocolate chips inside!
