Friday, April 10, 2015

Who doesn't love wedged potatoes? Specially if they're a bit spicy, healthy, crispy and with an impressive twist? Well, you can now check the easy recipe for the Spicy Chili Cheese Baked Wedges!

Preparation time: 10 mins
Cook time: 45 mins
Yields: 3

Your ingredients should have:
5 large potatoes, washed and wedged to your preferred thickness
2 tbsp olive oil
3 tbsp salt
3 tbsp garlic powder
2 tbsp of your preferred herb (Rosemary, thymes, dried basil, mint etc)
1 tsp chili flakes
1 tsp black pepper
1 tsp cumin

For the chili:
3/4 kg pure red ground beed (2% fat, hence, the healthier version)
3 tbsp tomato paste
1 large diced tomato
1 large diced onion
3 cloves of garlic
1/2 cup of water
2-3 tbsp chili powder (I personally used more)
Salt and pepper to taste

For the topping:
2-3 cups of shredded sharp cheddar cheese

Instructions:
-Preheat oven to 200 degreed celsius and put all your potato herbs in the olive oil to infuse the flavor. After mixing them, cut and wedge your potatoes into the preferred thickness, once you're done, pat them dry, toss them in the oil mixture and bake in the preheated oven for 25-35 minutes while flipping them half way so they're cooked equally.

-Meanwhile, prepare your chili by putting your ground beef into a pan, let them crisp up for a bit then add your diced tomatoes, onion, crushed cloves of garlic, chili, salt, pepper and sauté for 10 minutes until tender.

-Once they're tender, add your tomato paste and water and let it simmer over medium heat for 20 minutes.

*To assemble your fries, put your chili salsa on the fries, add a lot of cheese and bake again for 5 minutes or until cheese is molten.

PS: I made a low fat yogurt dip on the side to cut off the heat... it has only low fat yogurt and a bit of salt!
