Boiled Eggs Salad with a twist - Recommended by 'The Wellness Log'

Tracking your food intake and sticking to meal plans could sometimes be boring. However, since I ordered my first Wellness Log, things became really different specially that you get to choose your food preferences and they actually deliver you "A daily workout plan and nutrition log tailored to your exact needs" as the team like to say.

From my experience, you'll get to eat A LOT and you'll eat different, unusual food. As a WellnessLogger and a food lover by nature, I always tried to make a way to make my meals much much more interesting... that's why I'll be posting 2 recipes for you dedicated to the WellnessLoggers and fitness freaks on Tuesday and Saturday.

Today we'll be making a simple Egg Salad with home made dressing. Very simple, yet FULL of nutrients!



*Your ingredients should have:

*For the salad:
- 3 medium boiled eggs
- Handful of Kale
- Handful of Baby Spinach
- 5 Cherry Tomatoes cut into halves
- 1/4 onion - sliced
- 1tsp flax seeds
- 1tsp pumpkin seeds

*For the dressing:
- 1 tbsp olive oil
- 1 tbsp dijon mustard
- 1 tbsp low fat yogurt
- 1 tsp minced garlic
- salt
- pepper
- chili

 *Method:
 - Bring salted water to a boil and drop the eggs in it for exactly 7 minutes (I set a timer) and after that take them out in an ice bath so it stops cooking
- wash your veggies properly then cut your eggs into halves
- Whisk your dressing ingredients till it's silky then drizzle it on the salad and to finish it off, sprinkle your seeds on top!
